Instructions
- To make the dressing, whisk together the ingredients in a bowl.
- Place the greens (or shaved brussel sprouts) in a large salad bowl and drizzle with the dressing. Give it a toss. If you have the time cover it and let it sit for 30 mins.
- Add in the slices of apples, onion, cranberries, and nuts. Gently toss. I also added in chicken for a complete meal. Top with cheese and serve. This made for a really yummy lunch all week long!
Ingredients
- 1 lb Greens or Shredded Brussels Sprout
- 2 medium sliced apples
- 1/4 cup sliced red onion
- 1/2 cup dried cranberry
- 1/2 cup chopped pecans (or almonds)
- 1/2 cup Feta cheese
For the Dressing
- 1/3 cup White Wine Vinegar
- 1 tbs Lemon juice
- 3 tbs Avocado oil
- 1 tsp Salt
- 1/4 tsp pepper
- 3 tbs honey
